Food & Beverage Assistant Manager

Location: Crieff Hydro Family of Hotels
Reports To: Head of Food & Beverage
Salary: Up to £35,000 PA, based on experience

Job Overview

We are seeking a highly motivated and hands-on Food & Beverage Assistant Manager to support in overseeing the service standards and operational excellence of all restaurants and bars within our hotel. This role is critical in ensuring exceptional guest experiences by actively working on the floor, mentoring managers, and implementing best practices. The successful candidate will be a strong leader with a passion for hospitality, a keen eye for detail, and the ability to drive continuous improvement.

Key Responsibilities

Operational Excellence

  • Lead by example, actively working in all outlets to assess and improve service delivery.
  • Ensure consistency in food and beverage quality, presentation, and service standards.
  • Identify operational challenges and implement solutions to enhance efficiency and guest satisfaction.
  • Monitor and analyse guest feedback, implementing action plans for improvement.
  • Work closely with the culinary team to ensure seamless coordination between front-of-house and back-of-house operations.

Team Development & Training

  • Provide hands-on coaching and mentorship to restaurant managers, venue managers and bars manager, helping them develop strong leadership and service skills.
  • Design and deliver structured training programs to enhance service excellence, upselling techniques, and guest engagement.
  • Foster a culture of accountability, teamwork, and continuous learning.
  • Conduct regular performance reviews and set clear development goals for managers and supervisors.

Financial & Strategic Management

  • Support managers in optimizing labour costs, inventory control, and operational budgets.
  • Assist in driving revenue through upselling initiatives, menu engineering, and special promotions.
  • Work closely with the marketing team to enhance guest experiences through events and seasonal offerings.
  • Ensure compliance with all health and safety regulations, licensing laws, and hotel brand standards.

Candidate Profile

Experience & Skills

  • Minimum 5+ years of food and beverage management experience in a 4* hotel or high-end restaurant setting.
  • Strong leadership skills with a proven track record of mentoring and developing teams.
  • Hands-on operational experience in both restaurant and bar environments.
  • Excellent knowledge of service standards, guest relations, and hospitality best practices.
  • Financial acumen, including experience with budgeting, forecasting, and cost control.
  • Ability to work under pressure in a fast-paced, dynamic environment.
  • Strong communication and interpersonal skills, with a natural ability to inspire and motivate.
  • Must be able to work evenings and weekends to suit the business needs.

Qualifications

  • Degree or diploma in Hospitality Management or a related field (preferred).
  • Food Safety & Hygiene Certification (preferred).
  • Sommelier or beverage certification (a plus but not essential).
