Job summary

Harts Group in London is seeking an Executive Sous Chef to lead across El Pastor Group kitchens, driving authenticity and consistent quality. You will work closely with Head Chefs to strengthen kitchen leadership, coach teams, and ensure exceptional food, service and standards across the estate.

The role demands hands-on leadership, a strong palate for Mexican cuisine, and a passion for developing talent within a fast-paced, high-volume environment.

Qualifications

• Proven experience as a Senior Head Chef or Executive Chef in a multi-site group.
• At least 2 years’ professional experience with Mexican cuisine.
• Maintain consistent food quality, authenticity and execution across all kitchens.
• Lead, coach and develop senior sous chefs and future head chefs.

Responsibilities

• Be hands-on in service, confidently leading the pass and supporting busy services.
• Coach and develop senior sous chefs and future head chefs.
• Help standardise kitchen systems, ordering and opening/closing procedures.
• Manage GP, food costs, stock, wastage, labour and rotas across the estate.
• Ensure high standards of food safety, allergen management and hygiene.
