About the Venue:
Novotel Sydney Brighton Beach is a premium 4.5-star resort-style hotel overlooking the white sandy beaches of Brighton-Le-Sands and the picturesque Botany Bay. Currently undergoing a major refurbishment, the hotel is set to become one of NSW’s leading destinations for conferences and events, boasting 11 flexible function rooms, including two grand ballrooms with a combined sit-down capacity of over 800 guests.

About the Role:
We are seeking a talented and driven Executive Sous Chef to lead our Conference & Events culinary operations. This is a senior kitchen leadership role, responsible for high-volume food production across our large-scale event spaces and daily breakfast service. The successful candidate will thrive in a fast-paced environment, be solutions-focused, and bring a refined approach to food quality, staff development, and service delivery.

Key Responsibilities:

· Oversee all kitchen operations related to conference, events, and breakfast service

· Lead food production across 11 function spaces, including 2 ballrooms (450 and 350 guest capacity)

· Drive consistency, quality, and presentation across large-scale service operations

· Mentor and manage a diverse kitchen brigade, promoting high performance and development

· Collaborate with banquet and events teams to ensure smooth and timely service delivery

· Ensure compliance with food safety, hygiene, and HACCP standards

· Manage cost controls, stock ordering, and staff rostering in line with operational targets

· Contribute to recipe development and menu planning with a focus on seasonal, flavour-driven dishes

About You:

· 3–5 years’ experience as a Senior Sous Chef or Executive Sous Chef in a 4 or 5-star hotel or events centre

· Proven ability to lead large teams and manage high-volume kitchen environments

· Strong background in banqueting, conferencing, and buffet service (breakfast experience highly regarded)

· Excellent communicator with a calm, decisive leadership style

· Highly organised with solid knowledge of cost control, food safety legislation, and supplier management

· Ability to work a flexible roster including early mornings, weekends, and event-based hours

· Certificate III or IV in Commercial Cookery; Food Safety Certification required
