Job summary

Eden Hotel Collection seeks an Executive Chef to lead the food operation at Mallory Court Country House Hotel & Spa, including 3 AA Rosette dining at The Warwick and Sencha. You’ll drive menus, costs, and team performance while shaping a premium guest experience across weddings, conferences, and events.

You’ll be a proven culinary leader with a track record in luxury hotels, building a high-performing brigade and collaborating closely with the General Manager and other departments to sustain

Qualifications

  • Proven Executive or Head Chef in a luxury hotel with multi-outlet operation.
  • Strong people leadership with coaching, accountability and respect.
  • Inspires high standards while developing chefs who are proud to be in your brigade.
  • Strong commercial awareness with experience managing GP, payroll and menu engineering.
  • Excellent kitchen management using technology across purchasing, stock control, payroll, rostering, food safety and training.
  • Industry focus with a modern approach to fine dining and trend awareness.
  • Ambition to grow The Warwick and shape food across the whole hotel.

Responsibilities

  • Lead and oversee the food operation across three outlets including The Warwick and Sencha.
  • Develop menus, monitor food costs, and manage payroll, stock, and labour planning.
  • Build a positive kitchen culture, coach the brigade, and ensure high standards and teamwork.
  • Collaborate with General Manager and hotel teams to support food sales and guest experience.
  • Drive innovation while maintaining profitability and consistency across outlets.

What you’ll be doing?

As Executive Chef, you’ll lead the food operation across Mallory Court Country House Hotel & Spa, with responsibility for our 3 AA Rosette restaurant, The Warwick, alongside Sencha, our Japanese-fusion restaurant, and our weddings, meetings and events offering.

Following the launch of The Warwick in 2025, Mallory Court has entered an exciting new chapter as a dining destination in the Midlands. The restaurant has already built strong momentum, and this role offers the opportunity to build on that success - strengthening its reputation, continuing to raise standards, and bringing your own ideas and creativity to the table.

At the same time, this is very much a multi-outlet role. You’ll oversee the continued development of Sencha, ensuring its relaxed Japanese-fusion concept remains fresh and relevant for both spa guests and evening diners, while also leading our food offering across weddings, conferences, private dining and events.

You’ll take overall responsibility for kitchen performance across the hotel, balancing creativity and quality with a strong commercial focus. From menu development and food costs to payroll, stock control, labour planning and team performance, you’ll understand how to deliver an exceptional guest experience while running an efficient and successful operation.

You’ll also play a key role within the hotel’s leadership team, working closely with the General Manager and wider departments to support food sales, strengthen our local profile and ensure every outlet delivers the same high standards.

Just as importantly, you’ll create a positive and engaging kitchen culture. You’ll lead by example, develop your brigade and make sure people feel supported, challenged and proud of the food they produce.

What you’ll need?
  • Proven Executive or Head Chef experience within a luxury hotel operating at consistent 3 AA Rosette level, leading a multi-outlet food operation.
  • To be an exceptional people leader, creating a high-performing kitchen culture through coaching, accountability and respect.
  • To inspire high standards without ego, developing talented chefs who are proud to be part of your brigade.
  • Strong commercial awareness, with proven experience managing GP, payroll, menu engineering and overall kitchen performance.
  • Excellent kitchen management skills, embracing technology across purchasing, stock control, payroll, rostering, food safety, training and operational efficiency.
  • Industry focus – outwardly looking with the ability to understand food trends and evolve with a modern approach to fine dining.
  • The ambition to build on the success of The Warwick whilst shaping the future of food across the whole hotel.
