What you’ll do
As a Commis Chef in the Pastry Kitchen at The Dorchester, you will support the pastry team in delivering world-class desserts and patisserie across our signature outlets. You will play a crucial role in preparation and production, learning from experienced chefs while developing your technical skills in a five-star culinary environment. In this role, you will:
Assist in daily food preparations, including weighing, measuring, and portioning ingredients for desserts, pastries, and baked items.
Help ensure that all pastry items are prepared according to outlined recipes, with care for portion size, quality, and presentation.
Contribute to the smooth operation of the pastry section by maintaining cleanliness, organisation, and readiness during each shift.
Learn to make the most of surplus ingredients, supporting cost control measures and sustainability efforts in the kitchen.
Respond to special guest requests, including dietary adjustments or off-menu desserts, under the supervision of senior chefs.
Rotate between service areas such as The Promenade, In Room Dining, and Banqueting, gaining experience in a variety of luxury dining environments.
This is a role built for someone with passion, discipline, and a love of the craft, eager to contribute while developing under the guidance of a world-class pastry team.

Essential Skills and Experience
A genuine interest in pastry, baking, and dessert preparation.
Willingness to learn and follow instructions in a fast-paced kitchen.
Ability to work cleanly, safely, and efficiently, adhering to food hygiene standards.
Team spirit and a positive attitude, ready to assist colleagues and support service at any moment.
Fluent in English, with the ability to communicate clearly and respectfully with team members.
Preferred Skills
Completion of a culinary course or relevant kitchen experience in a pastry environment.
Understanding of basic kitchen operations, including equipment usage and stock rotation.
Interest in plating and presentation, with attention to visual detail.
Ability to work flexibly across different outlets and shift patterns.
