Nouvelle Garde in London is hiring energetic restaurant professionals to join our growing team. You will run your section to the Nouvelle Garde standards, preparing and cooking dishes from scratch with strong focus on cost control and waste minimisation. We offer an hourly rate of £14 (incl.
Tronc) and many benefits as we grow with new openings. Start date as soon as possible; applicants must have the right to work in the UK.
Back in 2019 in Paris, two friends, Charles and Victor, opened a brasserie together - the kind of place Parisians disappear into for a 3 hour lunch.
They called it La Nouvelle Garde: a promise to eat and drink the French way, done properly, 100% homemade, cooked from scratch from the highest quality seasonal ingredients.
We’re redefining the classics! Serving generous, beautifully executed French dishes in lively, high-energy spaces. Our restaurants are fast-paced, people-led and never stuffy. Quality matters. Atmosphere matters. But above all, team spirit is at the heart of everything we do!

So they opened another one, and then another one. And 9 brasseries later, it was finally time to bring it to London.
In July 2026 in Sloane Square, Brasserie Olivia was born.

Key Responsibilities
Food Excellence & Financial Discipline: Running your section to spec by preparing and cooking dishes to La Nouvelle Garde standards, while ensuring strict portion control and waste minimisation to manage food costs effectively
Leadership & Operations: Leading by example on your section by supporting and training Commis Chefs and managing prep lists, mise en place, and stock rotation to ensure a smooth service flow
Safety & Culture: Maintaining a clean, compliant section according to HACCP standards and using equipment responsibly to contribute to a focused and respectful kitchen culture
What We’re Looking For
Several experiences in busy, fast-paced restaurants, capable of handling the pressure of the "rush"
A deep sense of service and a passion for making guests feel truly cared for and valued
A calm, professional presence with strong organisational skills
