Job summary

Pasta Evangelists in London is seeking a Commis Chef to support the kitchen team by preparing pasta dishes to high quality. You will help maintain food safety, manage prep, and support the head chef for a smooth service.

Ideal candidates will be familiar with basic culinary techniques, work well under pressure, and collaborate closely with the team to ensure efficient service and consistent product quality across all Pasta Evangelists locations.

Responsibilities

• Prepare pasta sauces and ingredients to required par levels for quick service.
• Maintain a clean, safe kitchen environment and follow Health & Safety standards.
• Monitor stock levels, inform head chef of availability and needs.
• Record wastage and ensure FIFO stock rotation.
• Follow SOPs and How to Cards to maximise quality and speed.
• Keep equipment temperature logs and report any faults.
• Receive and store deliveries and ensure proper storage.
• Support the team to ensure smooth kitchen operations across shifts.

At Pasta Evangelists, we believe that Pasta makes everything better. We are looking for a dedicated Commis Chef to support our team by preparing our food offering to the highest quality and standards. Their role is crucial in maintaining a smooth and efficient operation in our Pasta Counter.

What you'll do at Pasta Evangelists:

• Ensuring that the kitchen is set up and ready for each service with the right amount of prepared Pasta Sauces and other ingredients that ensure the right amount for quick service but does not negatively impact food costs i.e. wastage. Including preparing par levels in the pre-prepared cold delivery fridge
• Wear a full smart clean uniform to the brand standard at all times whilst on shift and protective clothing as required.
• Ensure the full Pasta Evangelists Standard is adhered to, thereby ensuring our Pasta and other Products are kept to the highest possible standard for best product quality to our customer.
• To ensure that the kitchen is exceptionally clean and complies with all Health and Safety / Quality and Safety regulations.
• To keep an eye on the Availability and Inform the head chef and wider team in advance.
• Document and keep a record of information on food as appropriate to the company policy and effective date labelling and make sure stock rotation principles (FIFO) are fully adhered to.
• Ensure that all par levels are maintained. Ensure any food wastage is recorded accurately.
• Utilise the SOP to maximise the quality and speed of food readiness.
• For all equipment i.e. Fridges, Pasta Boiler, Ovens, Microwaves etc ensure that the right temperature records are kept and the correct procedures are followed for safe food handling.
• Ensure all equipment is maintained to the SOP standard. E.g. Kitchen management system, oven, fridges, freezers etc.
• Preparing and cooking food to the highest of standards and complying with the preparation of all food that meets Pasta Evangelist’s requirements as laid out within “How to Cards”
• Ensure all food is prepared quickly, in the correct order, to the How to Card standard and in line with all SOP’s.
• Full Checking deliveries into the Store and reporting any issues to the Team Leader/ Manager. To Ensure that all deliveries are Received & stored appropriately and storage requirements are adhered to.
• Full Use correct signage whilst cleaning is taking place.
• Full Ensure that all rubbish is disposed of correctly at all times, following the company waste management processes in relation to recycling and adhering to Local Authority requirements. Reporting of any equipment defects quickly to Head Chef.
• Full Ensure that all close down kitchen procedures are followed and that the kitchen is always clean and prepared as possible for the next shift. Full Regularly organise pest checks and report any concerns to the Team leader and higher management.

Who are you:

• You have knowledge of safe food handling, storage, and preparation techniques to prevent foodborne illnesses (preferable).
• You are familiar with basic culinary techniques such as chopping, slicing, dicing, and measuring ingredients.
• You have the ability to work efficiently in a fast-paced environment, prioritize tasks, and manage time effectively.
• You are meticulous and detail-oriented when it comes to food preparation, cleaning, and maintaining kitchen organization.
• You have the ability to work well as part of a team, communicate effectively with colleagues, and follow instructions from the Team Leader and/or Area Manager.
• You are willing to adapt to changing situations, work schedules, and tasks as required in a dynamic kitchen environment.
