Job summary

Estelle Manor in Oxfordshire is seeking a Chef de Partie, Chocolatier to join our pastry kitchen. You will lead full preparation of all pastry and chocolate items, using high quality ingredients to deliver menus that delight guests.

You’ll support senior chefs in developing menus and maintaining our kitchen concept while upholding the highest culinary standards. The role is full-time, on site, with a 45-hour week and an OTE package including gratuities.

Qualifications

• Strong chocolate tempering and crystallisation knowledge.
• Skilled in moulding, enrobing, dipping and finishing.
• Produce pralines, bonbons, truffles and chocolate bars.
• Knowledge of emulsions, caramels and decorations.
• Food hygiene, HACCP and allergen awareness.

Responsibilities

• Involved in full preparation of all pastry and chocolate.
• Deliver and maintain the kitchen concept with senior team support.
• Maintain high culinary standards through clear communication.
