Job Description:

The Canteen Chef is a key member of the hotel’s culinary team, responsible for delivering high-quality, nutritious meals to the hotel’s staff daily. This role supports employee wellbeing, morale, and performance by providing an excellent dining experience behind the scenes.

You will design and execute rotating menus that accommodate diverse dietary needs, reflecting creativity and nutritional balance. You will manage food preparation for up to 150 staff meals per day, maintain food safety standards, control costs, and ensure operational efficiency within the staff dining kitchen.

Working closely with the Executive Chef and kitchen management, the Canteen Chef ensures the back-of-house dining service aligns with hotel standards while operating independently from guest services.

RESPONSIBILITIES

  • Plan, prepare, and cook daily staff meals for approximately 150 team members, ensuring variety, nutritional balance, and high standards of taste and presentation.
  • Develop rotating weekly menus catering to dietary requirements such as vegetarian, vegan, gluten-free, etc., providing healthy options.
  • Monitor food costs, portion control, and waste to meet budget targets.
  • Maintain cleanliness, organization, and hygiene standards in the kitchen, ensuring HACCP compliance.
  • Manage ordering and stock control, ensuring the availability of fresh, quality ingredients.
  • Supervise kitchen support staff, ensuring tasks are completed efficiently.
  • Ensure meals are served on time during peak periods.
  • Coordinate with the Executive Chef and HR on special events, staff feedback, and meal satisfaction to improve offerings.
  • Keep records related to health inspections, temperature checks, and cleaning schedules.
  • Promote environmentally friendly practices, including waste segregation and responsible sourcing.
