Kitchens

Our flagship restaurant, Ryder Restaurant, holds 2 AA rosettes and serves 700 meals daily, including buffet options for hotel guests and conference delegates. We also operate four other food outlets: Sam's Bar & Kitchen, Rocca's, The Brabazon Bar, and the Pastry Kitchen. Our banqueting team caters to various events. Salary

The on-target earnings for this role are approximately £33,640.75 annually, comprising a base salary of £3,144.60 plus estimated gratuities of about £2,200 per year.

About The Role

As a Chef de Partie in the Ryder kitchen, your focus will be on the À la Carte menu, with five and a half hours of preparation time from Monday to Saturday, working from specification sheets to prepare food items for service.

You will set up and prepare menu items for your section, based on hotel occupancy, and may also be responsible for taking ownership of the kitchen in the absence of management.

  • Cooking and delivering beautifully crafted dishes using the best ingredients sourced locally
  • Understanding allergen and dietary safety protocols
  • Logging temperatures for hot items and refrigerators to ensure compliance
  • Managing your section during busy service and supporting your team for timely delivery
  • Cleaning your section and other kitchen areas to maintain compliance
About You

The ideal candidate will have at least 2 years of experience in a fine dining kitchen and excellent communication and presentation skills.
