Our hotel

The Balmoral is located at Edinburgh’s most prestigious address, No. 1 Princes Street, where the Old Town stops and the New Town begins. Our hotel’s majestic clock defines the city’s skyline, and since opening in 1902, it has run three minutes fast to ensure our guests will never miss their train.

Your key responsibilities

Rocco Forte Hotels is a collection of iconic hotels that respects the individuality of each location and its team members, encouraging them to be their natural selves while providing a local, authentic experience to our guests.

You will work with our talented team of chefs who are passionate about using fresh seasonal produce, celebrating the best of Scottish ingredients with classic French cooking.

Alongside your culinary skills, taste, and technique, you should be capable of self-direction and self-reliance in a busy hotel kitchen, bringing experience in a luxury dining environment.

As a valued part of the Forte family, you will:

• Work with the chefs to prepare and present food to the highest standards
• Support junior team members through training and guidance
• Serve seasonally inspired, classic brasserie dishes that combine French flavors with local ingredients
• Work effectively under pressure during busy periods
• Take charge of your designated section, maintaining high standards of preparation and presentation
• Follow a working pattern of 4 days on and 3 days off
