Our Royal Exchange satellite bar & restaurant is located in the heart of Bank, London. This bustling location is within walking distance to bus stops and Bank station, with plenty to do and explore nearby, just a hop, skip, and a jump to the London CBD.

Chef de Partie – Royal Exchange

Full-Time role - 45 hours per week across 5 days, Monday to Saturday, with Sundays off.

Situated in the Royal Exchange Courtyard in Bank, Fortnum’s Restaurant and Bar is one of London’s most Instagrammable restaurants, serving luxurious caviar, oysters, smoked salmon, and a selection of cocktails. The restaurant offers breakfast, lunch, dinner, and afternoon tea five days a week.

We are seeking an experienced Chef de Partie to join our team. This role offers an exciting opportunity to develop your skills in a busy restaurant environment.

Your Responsibilities
  • Work with the Senior Team to ensure high standards of food quality within your section.
  • Mentor and develop Demi Chefs and Commis Chefs, leading by example.
  • Regularly check your section for standards, audits, and temperature controls.
  • Take ownership of stocktaking and report key indicators to the Head Chef.
  • Pre-empt potential issues in the kitchen and communicate them to your line manager.
  • Collaborate with the restaurant team to ensure smooth front and back of house operations.
  • Communicate effectively about menu details with your team.
  • Plan, organize, and manage time efficiently to execute operational tasks.
  • Adhere to company policies, controls, and standards, including hygiene and health & safety.
  • Monitor and maintain inventory levels, reporting to Senior Chefs as needed.
