Qualifications

  • Experience in all areas of food preparation including butchery, fish prep, sauce, and patisserie.
  • Knowledge of HACCP, food hygiene, and safety regulations.

We are recruiting a passionate, experienced Chef de Partie to deliver our carefully curated menus. Inspired by the seasons and our specialist Cornish suppliers, you will be an integral part of pushing our food offering to the next level. Our ideal candidate will be articulate, well presented, and skilled across multiple areas of food preparation. You will be confident running a section, and consistently deliver to a high standard. Always a team player, you will seek to evolve and contribute to a safe working environment for all. Experience in a professional kitchen is a must with a natural tendency to do everything to the best of your ability. We will continue to provide the training and development you need to progress.

Overview
Responsibilities and Duties
  • Preparing, cooking and presenting food in accordance with agreed restaurant standards and recipes.
  • Using guest numbers to forecast usage, using portion control, and preparing correct levels of “mise en place” and set up for service.
  • Stock management including using correct rotation and daily checks on stored food products, assist with regular stock taking.
  • Managing a section and working in a clean and tidy manner.
  • Ensuring that all kitchen operations are in compliance with food hygiene (HACCP) and safety regulations.

We work straight shifts covering breakfast, lunch, afternoon tea and dinner, as well as a small function trade.

  • Minimum of 2 years’ experience in a quality hotel (4-star or higher) or restaurant to at least Demi-CDP level.
  • Experienced in all areas of food preparation including butchery, fish prep, sauce, and patisserie.
