Are you ready to craft unforgettable culinary creations at the royal crown jewel of Surrey? Located on the historic site of a Royal Tudor Palace built by King Henry VIII, Oatlands Park Hotel is looking for a skilled and passionate Chef de Partie to join our talented kitchen brigade.

What will you do?

You will report to the Head Chef, Senior Sous Chef, and Sous Chef. You will be responsible for taking care of the daily food preparation and duties assigned.

Main Responsibilities
  1. Manage a section within the kitchen.
  2. Ensure that dishes are prepared and cooked according to restaurant standards.
  3. Manage the development and supervision of the Commis Chefs on your section, ensuring they are fully trained and understand their duties.
  4. Ensure the stock is rotated and controlled within your section.
  5. Ensure the cleaning schedule is followed and tasks are delegated appropriately.
  6. Understand the functional administration of the restaurant.
  7. Be knowledgeable of daily business, reservations, menu, and menu availability.
  8. Maintain detailed knowledge of the full menu and be able to explain dish descriptions.
  9. Ensure compliance with legal health and safety requirements.
  10. Work collaboratively with the head chef for smooth kitchen operations.
  11. Adhere to all policies, procedures, and guidelines.
  12. Ensure compliance with ACCP standards within the kitchen and outlets.
Education and Qualifications
  • NVQ Level 2 or equivalent qualification.
  • 5 GCSEs A-C including Maths and English.
  • Relevant professional qualifications in food & beverage.
  • Food hygiene, HS&E, and First Aid certifications.

  • Previous experience as a Chef de Partie, preferably in fine dining or banqueting.
  • Passion for cooking and high-standard presentation.
  • Understanding of the restaurant's contribution to business success.
