Qualifications

• Experience in a supervisory kitchen role is required.
• Knowledge of Dim Sum, starters, and Peking Duck preparation is necessary.
• Familiarity with Japanese cuisine is an advantage.

• Lead and manage a specific kitchen section for high-quality dishes.
• Oversee mise en place and service for Chinese dishes focusing on the Wok section.
• Support the Sous Chef in training junior team members.

About Mei Ume:

Mei Ume offers traditional Chinese and Japanese dishes with a modern approach. Showcasing two of the greatest Asian cuisines under one roof, the restaurant presents a colourful selection of sushi, sashimi and Chinese main course dishes.

What you will do:

• Lead and manage a specific kitchen section, ensuring high standards of food preparation and presentation

• Oversee mise en place and service for Chinese dishes, with a focus on the Wok section

• Support the Sous Chef in training and mentoring junior team members

• Maintain strict hygiene, safety, and food quality standards in line with Four Seasons policies

• Collaborate with the culinary team to develop new menu items and seasonal offerings

What you bring:

• Formal culinary training or equivalent hands-on experience

• Prior experience in a supervisory role in the kitchen

• Proficient knife skills and the ability to multitask in a fast-paced environment

• Strong expertise in Chinese cuisine, particularly theWok section

• Knowledge ofDim Sum,Starters, andPeking Duckpreparation

• Familiarity with Japanese cuisine is a strong advantage

• Excellent leadership and administrative skills

• Adaptability and a collaborative spirit

• Good command of the English language
