Job Title: Chef de Partie / Senior Chef de Partie – 2 AA Rosette Restaurant (Pushing for 3AA Rosettes)
Location: Clearwell, Forest of Dean, Gloucestershire
Salary: Up to £36,000 per annum + Tips & Paid Overtime
Job Type: Full-time, Permanent
Schedule: 5 days per week, including evenings and weekends
Live-in Available - Live in is £80 per week. Small double room in shared house. Shared bathroom with one other room.

About the Role

We are seeking a talented and motivated Chef de Partie or even a Senior Chef de Partie to join a 2 AA Rosette Restaurant, located within a 3 Red Star Luxury Hotel in the heart of the Royal Forest of Dean. The restaurant has maintained its 2 AA Rosettes for over 10 years and is actively working towards achieving 3 AA Rosettes.

The property, once a farm, has been transformed into a stylish boutique hotel with 20 rooms, cottages, and suites, offering a perfect blend of laid-back luxury. The hotel has earned accolades including The Good Hotel’s Guide Country Hotel of the Year 2019, Sawday's Hotel of the Year, and Taste of the West’s Hotel of the Year. The restaurant serves a seasonal menu based on locally sourced ingredients, regularly catering to up to 40 covers per evening.

As a Chef de Partie or Senior Chef de Partie, you’ll work closely with the Head Chef and Sous Chef, managing your section and contributing to the continuous development of the restaurant's offering. Your input will be vital as the team pushes for 3 AA Rosettes and continues to build on its reputation for exceptional dining.

Key Responsibilities

Manage your section during service, ensuring dishes are prepared to the highest standard

Collaborate in menu planning, suggesting innovative seasonal dishes

Oversee junior chefs, helping to develop their skills and ensure smooth service

Ensure kitchen cleanliness, food hygiene, and health & safety standards are met

Work closely with the Head Chef and Sous Chef to deliver a menu that aligns with the restaurant’s 2 AA Rosette standards and drive towards 3 AA Rosettes

Assist in day-to-day kitchen operations and contribute to the training of new staff

About You

Experience as a Chef de Partie, with the potential to step up to Senior Chef de Partie

Previous experience in a Rosette environment is highly desirable

Passion for using seasonal, local ingredients and a focus on quality

Excellent communication and team-working skills

Strong organizational skills and the ability to work under pressure

A desire to develop within a Michelin Guide-listed, award-winning restaurant
