Mount Royal Hotel Edinburgh by the Unlimited Collection is seeking a charming and engaging Chef de Partie with a passion for service excellence.

You will report to the Head Chef, responsible for the smooth running of your designated section in the Kitchen. To ensure all food service areas achieve a consistently high standard of food presentation suitable to that of an ambitious 4-star Hotel.

A Chef De Partie Will Be Responsible For

• Ensuring the cleanliness and tidiness of all working areas
• Preparing food to an exceptional standard to surprise and delight customers by adhering to the standards set by the AA
• Supervising the junior members of the Kitchen team including the Commis Cheds and Demi Chef de Parties
• Ensuring planning and preparation for service is completed in a prompt, organised and efficient manner
• Be aware of booking levels and occupancies, ensuring the correct quantities of food are prepared to avoid unnecessary wastage
• Promoting an effective and efficient communication culture throughout the department via team briefs and departmental meetings
  
  

To be successful in the role of Duty Manager, we require:

• 2 AA Rosette location experience
• Experience as a Chef de Partie
• Experience within a 4* or 5* hotel advantageous
• Excellent organisational skills
• Excellent leadership skills and communication skills
• Experience with food ordering and stock management
• Understanding of GP% management
• The ability to work under pressure and be able to stick to strict deadlines
• The ability to work independently and as part of team
