Job summary

UNAVAILABLE is seeking a candidate to join our meat processing team in Wales. The successful applicant will have experience in butchery at primary and retail levels and will join a well-established team focused on producing better food naturally.

Responsibilities include checking primals and steaks against specifications, training staff on checks, verifying claims with photographic evidence, and reviewing all claims before supplier escalation.

Qualifications

• Previous experience in butchery and/or butchery management.
• Good understanding of cutting from carcass.
• Strong attention to detail and manual dexterity.
• Ability to work in a cold environment and stand for extended periods.
• Commitment to health and safety standards.

Responsibilities

• Check quality of primals and steaks against specifications.
• Train and monitor relevant people on checks against specifications and how to rectify/reject products.
• Verify claims/rejections against specification and gather photographic evidence.
• Review all claims/rejections before sending to supplier.
• Check and challenge trim, off cuts and overs; investigate causes and implement corrective actions.
• Collaborate with production managers to analyse yields and implement corrective actions.

Overview

The successful candidate will have experience or a good understanding of butchery at a primary and retail level.

Responsibilities

• Check quality of primals and steaks against specifications
• Train and monitor the relevant people on:
  • How to carry out checks against specifications,
  • Rectify/reject primals/steaks/joints
  • Segregate potential claims/rejections

• Verify the claims/rejections making sure that:
  • Claim/rejection is correct against specification
  • Weights claimed/rejected are matching Hellenic weights
  • Gather photographic evidence against the above
  • To review all the claims/rejections prior to sending to the supplier,

• Check and challenge the trim, off cuts and overs generated at each production run.
  • Investigate why generated, establish RC and corrective actions in order to prevent repeat mistakes.

• Work with production Operational managers to analyse yields that do not meet target :
  • Carry out RC and implement corrective actions
