Your responsibilities

• Produce dishes on time and to the expected standard, ensuring that each item that reaches the pass is correctly garnished and portioned, presented on the prescribed serving dish.
• Maintain levels of control regarding food hygiene and safety, including HACCP, at all times.
• Manage your section during service, including directing Demi Chef de Parties or Commis Chefs assisting you.
• Ensure timely and accurate preparation of food, including the late-night reduced menu.
• Support room service and operate within two lounge departments, maintaining high standards of service and coordination.
• Produce sufficient mise en place for each service, and correctly label and store unused items.
• Manage stock effectively, ensuring food is kept under optimum conditions.
