Job summary

The St. Regis London invites applications for a Chef de Partie (Breakfast Chef) to lead the breakfast section in a luxury setting.

You will work with senior chefs to prepare and present breakfast dishes to exacting standards, ensuring consistency, efficiency and refined service in a prestige Mayfair hotel. Ideal candidates will have luxury or fine-dining experience, strong knowledge of HACCP and food safety, and a proactive attitude.

Qualifications

• Experience as Chef de Partie in luxury or fine dining.
• Ability to work breakfast shifts.
• Knowledge of food safety standards (HACCP).

Responsibilities

• Prepare, cook and present breakfast dishes according to recipes and guidelines.
• Manage the breakfast section for consistency and efficient service.
• Prepare a range of breakfast items including egg dishes, pastries and hot buffet items.
• Ensure mise en place for breakfast service is organised to the highest standard.
• Regulate temperatures of ovens and grills for optimal cooking conditions.
• Monitor food quality, portions and presentation.
• Assist with dietary requirements and guest requests when required.
• Maintain accurate food logs and compliance with food safety standards.
• Communicate effectively with the team during service.
• Inform senior chefs of excess stock to minimise waste.
• Liaise with F&B teams regarding breakfast items and availability.
• Keep work areas clean, organised and compliant with hygiene standards.
• Report maintenance issues or safety concerns promptly.
• Follow all policies, health and safety procedures.
