Job summary

Constance at Fulham Pier, operated by Sodexo, seeks a Beverage Manager to lead beverage operations across a premium dining and matchday setting. You will oversee stock, supplier relations and a hospitality team to deliver exceptional drinks and guest service.

Role requires experience in fine-dining beverage operations, knowledge of wines, spirits and cocktails, and the ability to manage costs while maintaining high standards during peak periods and events.

Qualifications

• Proven experience managing beverage operations, ideally within a Michelin level restaurant.
• Strong knowledge of beverage products including wines, spirits and cocktails.
• Experience in managing bar stock, inventory and ordering processes.
• Ability to lead and motivate a team with high service standards.
• Knowledge of health, safety and licensing regulations related to beverage service.
• Excellent communication and interpersonal skills; guest issue resolution.
• Flexibility to work during peak periods, including matchdays and weekends.

Responsibilities

• Lead beverage operations at Constance, delivering exceptional drinks and service standards.
• Oversee matchday beverage operations across Constance, Originals, Thames Bar and Water's Edge.
• Lead, train and develop the beverage team with knowledge building and guest service focus.
• Manage stock, ordering and supplier relationships with accurate inventory and minimal waste.
• Control beverage labour costs and achieve gross profit targets within budgets.
• Ensure compliance with licensing, food safety and health and safety requirements.
• Collaborate with Restaurant Manager, Head Sommelier and kitchen to deliver seamless experiences.
• Partner with Fulham FC and Partnership teams for matchday activations and launches.
• Maintain high standards of service, professionalism and beverage product knowledge.

• Lead beverage operations at Constance, delivering exceptional drinks and service standards that complement the restaurant's dining experience.
• Oversee matchday beverage operations across Constance, Originals, Thames Bar and Water's Edge, maintaining quality and efficiency during busy service periods.
• Lead, train and develop the beverage team, building product knowledge, confidence and a consistently high standard of guest service.
• Manage stock, ordering and supplier relationships, ensuring product availability, accurate inventory records and minimal wastage.
• Control beverage labour costs and achieve gross profit targets in line with agreed budgets.
• Maintain compliance with licensing, food safety and health and safety requirements, ensuring clean, safe and well‑organised bar areas.
• Work closely with the Restaurant Manager, Head Sommelier and kitchen team to deliver a seamless food and beverage experience.
• Collaborate with Fulham FC and Partnership teams to deliver matchday beverage activations, premium serves and product launches that enhance the guest experience.
• Proven experience managing beverage operations, ideally within a Michelin level restaurant.
