Job description

Chalk at Wiston Estate whom has recently been awarded five stars from William Sitwell in The Telegraph, and holder of a TripAdvisor Travelers Choice Award, is seeking a dedicated and experienced Bar Manager.

The restaurant works alongside a Multi award-winning winery set in the heart of the South Downs.

The Bar Manager will support daily operations of our establishment, Chalk Restaurant. The ideal candidate will support the restaurant to operate efficiently, maintain a high standard of customer satisfaction. This role involves managing operation of the bar, including service, staffing and cleanliness whilst also ensuring compliance with health and safety regulations, and creating a welcoming environment for guests

Responsibilities:

Operations & Guest Experience

  • Ensure all cocktails, wines, and beverages are prepared with consistency and precision
  • Collaborate with the culinary team to pair drinks with seasonal menus
  • Uphold exceptional guest service, ensuring an elegant and welcoming bar environment
  • Address guest concerns and special requests with professionalism and discretion
  • To help facilitate estate policy to the team ensuring compliance to both policy, procedure and health & safety requirements
  • Lead pre-shift meetings to review specials, service standards, and beverage focus
  • Foster a culture of professionalism, hospitality, and accountability
  • Create and manage bar staff schedules in alignment with business needs
  • Curate and maintain a creative, balanced cocktail menu aligned with the restaurant’s concept
  • Manage wine, beer, and spirits inventory, ordering, and vendor relationships, assist with reporting and restocking as needed.
  • Track usage, control costs, and minimize waste
  • Ensure all licensing, safety, and compliance standards are met.
  • Assist with closing duties and shift-end reports, including POS reconciliation
  • Ensure Food Alert app is used on a daily basis to ensure compliance across the operation, alongside supporting staff with the usage of CPL learning and Food alert

Requirements:

  • Proven experience a bar management level or similar role in the hospitality industry.
  • Strong understanding of restaurant management software, POS systems, and Microsoft Office Suite.
  • Knowledge of food and beverage quality standards and regulations.
  • Excellent communication, leadership, and organisational skills.
  • Ability to work flexible hours, including evenings, weekends, and holidays.

What we will offer you

  • 40 hours per week
  • Salary £31,200 Per Annum basic (+service charge)
