As our Bar
General Manager, you will be instrumental in shaping all facets of our bar
operations. You will be a key partner alongside Beverage Director, Pietro
Collina, in curating an exceptional and evolving cocktail and spirits program,

Opportunity: Lead with Passion and Purpose

As Bar
General Manager, you will be the driving force behind the day-to-day success of
Viajante87. Your responsibilities will encompass overseeing scheduling and
financial reporting, developing impactful training programs that ignite
knowledge and engagement within the team, orchestrating seamless local and
international event management, ensuring impeccable BOH/FOH organization,
cultivating exceptional guest relations, strategically supporting promotions,
and consistently delivering outstanding service that fuels strong financial
performance.

This is a

collaborate closely with and report directly to Pietro Collina, the Beverage

Responsibilities: Your Canvas for Leadership

• Inspire and Cultivate a
  High-Performing Team: Lead, mentor, and develop our senior bar team,
  fostering a passionate and guest-centric culture where exceptional service
  is paramount.
• Drive Menu Evolution with
  Vision: Work closely alongside Pietro Collina to oversee the meticulous
  execution and exciting evolution of our cocktail menu, collaborating with
  senior bar members to ensure seamless roll-outs and crystal-clear
  communication.
• Orchestrate Efficient Bar
  Operations: Expertly manage all bar operations, ensuring meticulous stock
  level management, efficient ordering processes, and accurate inventory
  control.
• Master Our Systems for Seamless
  Service: Oversee and maintain our POS/Ordering System (Tevalis), including
  accurate recipe and product input, intuitive EPOS design updates, and
  consistent system upkeep.
• Champion Uncompromising
  Beverage Standards: Ensure every beverage, from our signature cocktails to
  our curated spirits selection, is served to the highest possible standard,
  consistently delivering on impeccable quality, stunning presentation, and
  exquisite flavor.
• Fuel Growth and Profitability:
  Proactively identify revenue-generating opportunities and collaborate
  closely with senior leadership on strategic pricing, compelling
  promotions, and engaging events.
• Uphold Rigorous Operational
  Standards: Maintain strict adherence to all licensing laws, comprehensive
  health and safety protocols, and stringent hygiene regulations.
• Empower Through Knowledge and
  Growth: Implement dynamic training and development programs for the bar
  team, cultivating a culture of continuous growth, knowledge sharing, and

• Lead with Daily Focus and
  Inspiration: Conduct impactful daily 15-minute briefings, focusing on
  service enhancements, important updates, ongoing education, and igniting
  team inspiration.
• Forge Culinary Harmony:
  Collaborate closely with the Beverage Director and Executive Chef to
  ensure a seamless and complementary relationship between our drinks and
  food menus.
• Champion Kitchen Excellence:
  Work in partnership with the Executive Chef to ensure the kitchen operates
  efficiently, with all staff adhering to the highest standards of
  cleanliness and execution.
• Strategically Curate Our
  Backbar: Continuously analyze sales data and industry trends to
  proactively propose informed solutions for optimizing our backbar
  selections, identifying opportunities for growth or necessary reductions.
• Be an Engaged Industry Leader:
  Actively participate in the cocktail bar industry, staying informed about
  key events, innovative activations, and valuable opportunities to share
  with our team, ensuring Viajante87 remains at the forefront of bar
