ZEST Hotel & Resort Ibiza is seeking a Director of Food & Beverage to lead the pre-opening F&B operation across restaurants, bars, pool and events. You will shape the guest experience for an international audience and build a high-performing team.

The role requires luxury hospitality expertise, strong commercial acumen in revenue, payroll and purchasing, and fluency in Spanish and English. Residency in Ibiza during the operating season is expected.

• Collaborate with Sales, Marketing and Events to maximise opportunities.
• Deliver exceptional experiences for international, VIP and high-profile guests.
• Coordinate F&B operations around pool parties, DJ sets, entertainment and promoter-led events.
• Support pre-opening, seasonal mobilisation and operational readiness.

We are looking for an exceptional Director of Food & Beverage to join the pre-opening leadership team at ZEST Hotel & Resort Ibiza , an exciting new five-star lifestyle resort launching in Ibiza. This is a significant opportunity for an experienced F&B leader to help shape the food, beverage and entertainment experience of a new luxury destination from the ground up.

The Opportunity

Reporting into the resort leadership team, the Director of Food & Beverage will take overall responsibility for the commercial and operational performance of the resort's F&B operation. With oversight across restaurants, bars, and pool, in-room dining and events , you will build and lead a high-performing team while creating distinctive guest experiences for an international clientele. As part of the pre-opening team, you will also play an important role in bringing the ZEST F&B concepts to life ahead of launch.

• Recruiting, developing and inspiring an outstanding F&B leadership and operational team
• Working collaboratively with Sales, Marketing and Events to maximise commercial opportunities
• Delivering exceptional experiences for international, VIP and high-profile guests
• Coordinating F&B operations around pool parties, DJ sets, entertainment and promoter-led events
• Supporting pre-opening, seasonal mobilisation and operational readiness

About You

We are looking for a commercially minded, highly visible F&B leader who understands how to combine luxury service, strong operational discipline and lifestyle hospitality .

Ideally, you will bring:

• Senior F&B leadership experience within a luxury resort, lifestyle hotel or complex multi-outlet operation
• A strong track record of leading successful restaurants and bars
• Excellent commercial understanding across revenue, payroll, purchasing and cost control
• Experience recruiting, developing and leading large and diverse F&B teams
• Strong knowledge of contemporary restaurant, bar and beverage trends
• Experience within a pre-opening or seasonal resort environment would be highly advantageous
• Confidence operating within a fast-paced, entertainment-led hospitality environment
• Fluent Spanish and English
• Valid EU work authorisation or the appropriate Spanish work permit

This role requires residency in Ibiza during the operating season .
