El Fuerte Marbella 5, part of Fuerte Group Hotels, seeks an experienced Head Waiter & Sommelier to oversee service in the dining sector and lead wine recommendations at Marbella’s premier resort. You will run daily briefings, supervise table service, train staff, and manage wine pairings and cellar operations.

The role requires a minimum of 3 years in a similar leadership position within 5-star properties, with a vocational degree in restaurant management or services and oenology training.

At El Fuerte Marbella 5*, part of Fuerte Group Hotels, historic charm meets luxury. Originally opened in 1957 as our flagship property, this landmark resort re-emerged in 2023. Specifically, it reopened as a fully transformed 5-star destination. The resort sits on Marbella’s scenic promenade, just five minutes from Plaza de los Naranjos. Furthermore, El Fuerte Marbella features 266 luxury rooms, casual luxury design, and sweeping views. Therefore, we are seeking an experienced, detail-oriented Head Waiter & Sommelier / Section Captain (Jefe/a de Sector – Sommelier) in Marbella, Spain.

In this floor leadership role, you will supervise service quality across your assigned dining sector and lead wine recommendations. Specifically, you will run daily team briefings, oversee table service, manage wine pairings, keep the cellar stocked, and step in for the Assistant Head Waiter (Segundo/a Maître) when needed. By doing so, you will ensure an extraordinary culinary experience across every shift.

Your Mission: Sector Leadership & Sommelier Excellence

Your primary goal involves driving dining operational success across your assigned resort section. To achieve this, you will direct floor service and curate wine experiences. At the same time, you will train station personnel on product knowledge. Therefore, you will run daily briefings, supervise table setups, recommend wine pairings, and manage wine list updates alongside the Head Waiter (Maître) and F&B Manager. As a result, you will eliminate service bottlenecks and protect our resort’s reputation for luxury hospitality.

Your Key Responsibilities:

• Sector Supervision & Floor Leadership: Oversee and coordinate team duties within your sector, maintaining strict compliance with group protocols. Furthermore, step in for the Assistant Head Waiter during their absence.
• Daily Briefings & Guidance: Run daily mini-briefings with restaurant staff to communicate departmental goals, service expectations, and station setups.
• Guest Care & Sommelier Services: Greet, seat, advise, and farewell guests. In addition, recommend and serve fine wines, driving wine sales to elevate dining experiences.
• Wine List & Cellar Management: Update wine lists in collaboration with the Head Waiter and F&B Manager. Moreover, keep the wine cellar organized, clean, and fully stocked.
• Team Training & Skill Development: Organize and lead weekly training sessions focusing on product knowledge, wine pairings, and service protocols.
• Cashier & Store Requisitions: Oversee customer billing, daily cashier reconciliation, and supply requisitions sent to the central storeroom (Economato).

Who You Are: The Experienced Sector Captain & Sommelier

• Proven Foundations: You bring at least 3 years of experience as a Head Waiter, Section Captain, or Sommelier inside 5-star luxury hotels. Ideally, you gained this background in properties affiliated with Leading Hotels of the World or Preferred Hotels & Resorts.
• Educational Background: You hold a Vocational Degree (Grado Medio or Superior) in Restaurant Management or Restaurant Services, combined with formal training in Oenology (Enología). Qualifications in protocol and guest service are highly valued.
• The Linguist: You display B1-level proficiency in English alongside fluent Spanish. Knowledge of additional international languages is considered a plus.
• Technical Proficiency: You feel comfortable working with Property Management Systems (PMS), POS systems, and Microsoft Office tools.
• Key Competencies: You demonstrate strong floor leadership, wine expertise, exceptional communication, active sales drive, and attention to detail.
