Job description

Understanding supramolecular protein structures in multiphase food

Applicants are invited for a PhD fellowship/scholarship at Graduate School of Technical Sciences, Aarhus University, Denmark, within the Food Science programme. The position is available from 15 January 2027 or later.

Title Understanding supramolecular protein structures in multiphase food

Research area and project description To move the green transition of the food sector forward, there is a need for novel ingredients from sustainable sources that provide the required functionality in food. Designing formulations with plant-based ingredients therefore requires an in-depth understanding not only of their structure and function in isolation but also of their interactions with other ingredients and their dynamics during processing.

This project will focus on protein structure–function relationships using complex model systems, such as emulsions, foams, and gels, applying advanced colloid science and soft matter techniques to embrace the complexity of food.
