Job summary

DTU – Technical University of Denmark invites applications for a PhD position in spontaneous solid-state fermentation starters within the BRIGHT Mission 2: Microbial Foods. The project combines food science, microbiology, and social science methods to advance sustainable food design.

You will join the Sustainable Food Innovation Group and the Fermentation Cultures Group, conduct literature reviews, design and analyse a global survey, and publish results with producer partners and international

Qualifications

  • Two-year Master’s degree (120 ECTS) in a relevant discipline or equivalent.
  • Fluent in written and spoken English.
  • Literacy in common IT systems.
  • Experience with microbiology or food fermentation.
  • Interest in social science methods and fieldwork.
  • Ability to work both independently and in teams.

Responsibilities

  • Develop interdisciplinary understanding and literature.
  • Generate and analyse metagenomic, metabolomic, and toxicological data.
  • Plan and conduct a global survey of traditional starters.
  • Analyse data with bioinformatics and statistics; visualise findings.
  • Disseminate results through publications and producer outreach.
