GCG in Cartagena, Colombia seeks production-focused personnel to support in-flight and institutional catering operations. You will prepare meals, verify quality standards, and ensure adherence to production schedules and HACCP guidelines.

The role emphasizes teamwork, attention to detail, and strict compliance with safety and quality protocols as part of a diverse operations team serving national and international flights.

Formación

• Experience in food production or catering is preferred.
• Knowledge of HACCP and BPM standards.
• Strong teamwork and attention to detail.

Responsabilidades

• Ensure usage and adherence to activities in the production schedule.
• Prepare cold/hot services as indicated for Institutional clients and flight crew or passengers on national and international flights.
• Assemble hot and cold meals per client manuals (weights, presentation, quality).
• Verify cold storage of raw materials and in-process products for production planning.
• Pre-stage raw materials as directed by the Production supervisor.
• Ensure foods for prep meet gram weights and preparation standards.
• Complete HACCP records for compliance.
• Track BPM standards and fill temperature forms in real time during the shift.
• Use equipment per manuals and guidance from supplier/maintenance.
• Work according to VPS and deliver records to the supervisor at shift end.
• Provide FPY reports according to improvement parameters.

• a. Garantizar el uso y el cumplimiento de las actividades establecidas en la hoja de programación.
• b. Preparar servicios fríos, calientes o lo que se indique en la orden de Producción para clientes Institucionales y tripulación o pasajeros de los vuelos Nacionales e Internacionales
• c. Realizar los montajes calientes y fríos según las especificaciones descritas en el manual del cliente (gramajes, presentación y calidad)
• d. Verificar el cuarto frio de materias primas y productos en proceso; para la planificación de su producción.
• e. Efectuar el pre alistamiento de las materias primas que indique el supervisor de Producción.
• f. Velar porque los alimentos para el alistamiento cumplan con el gramaje y estándares de preparación establecida.
• g. Realizar los registros HACCP para su debido cumplimiento.
• h. Generar seguimiento de los estándares BPM, Diligenciar los formatos de temperatura durante el turno asignado y con información en tiempo real.
• i. Dar buen uso de los equipos del área cumpliendo con los manuales de uso y recomendaciones dadas por el proveedor y/o el área de mantenimiento.
• j. Trabajar de acuerdo al VPS (Variable Production Schedule/ Formato variable de producción) asignado, cumplirlo y entregarlo diligenciado al supervisor de área al final del turno.
• k. Brindar los reportes FPY (First Pass Yield / Justo a tiempo) de acuerdo a los parámetros establecidos por mejora continu
