Job Description

Join our Culinary Team as a Sous Chef, where you have the opportunity to learn and grow in a Relais & Châteaux property, also recognized by Forbes, Michelin (Two Keys), AAA 4-Diamond, and T&L’s World's Best Hotel.

The Sous Chef will assist the Executive Chef in all aspects of daily kitchen operations, maintaining the highest level of culinary excellence. Responsibilities include production, presentation, supervising staff, training, mentoring, ordering, and inventory management. Sous Chefs will also participate in menu planning, act as a liaison between the Executive Chef and the kitchen brigade, and ensure a safe, sanitary, and healthy working environment. They will assume supervision of staff and additional duties in the absence of the Executive Chef and/or fellow Sous Chef. Proficiency in a fast-paced fine dining establishment is required.

Responsibilities
  • Ensure efficient and personalized guest service meeting and exceeding Relais & Chateaux, AAA 4 & 5 Diamond, and Forbes Standards.
  • Assist Chef and fellow Sous Chefs in daily culinary operations.
  • Uphold and ensure the brigade maintains the highest level of culinary excellence, adhering to all procedures and protocols.
  • Ensure safety and hygiene standards are maintained.
  • Supervise staff, oversee training and development, and handle human resources matters.
  • Manage ordering and inventory.
  • Participate in menu planning.
  • Manage culinary operations in the absence of the Chef.
Qualifications

  • Knowledge of and ability to meet and exceed Relais & Chateaux and AAA 4 Diamond standards.
  • Exceptional attention to detail and focus.

  • A calm demeanor with a sense of urgency when needed.
  • Excellent verbal and written communication skills.
  • Strong time management and organizational skills.
  • Creativity and adaptability to guest needs and requests.
  • Familiarity with current culinary and F&B trends, innovations, and techniques.
  • Journeyman/Red Seal Certification is an asset.
  • Minimum of 3 years in a similar position in a fine dining establishment or equivalent experience.
  • Valid FoodSafe Certification.
  • Ability to commit to the position for a mutually agreed period.

Salary/Wage: $57,000 per year.
