Job summary

Dexterra Group is seeking a Second Cook to support kitchen operations at Royal Roads University. You will assist in daily prep, plating, and maintaining cleanliness, while upholding food safety and quality standards.

The role requires at least 2 years of cooking experience in a similar setting, FoodSafe Level I, and WHMIS certification with an 80% pass. HACCP knowledge is a plus. On-site position with benefits and growth opportunities.

Qualifications

• Minimum 2 years of cooking experience in a similar or institutional environment.
• FoodSafe Level I is required.
• WHMIS test with 80% or higher is expected; SafeCheck advanced safety is an asset.
• HACCP certification is an asset.

Responsibilities

• Ensure consistent quality standards in food preparation and sanitation in the kitchen.
• Prepare food items for sandwich making: select bread, slice meats/cheese, assemble fillings.
• Visually inspect cold food for proper color, presentation, and appeal.
• Check and control proper storage of all food items in refrigerators and freezers.
• Prepare and set up a full salad bar for lunch and dinner; manage stock usage.

TheSecond Cookis responsible for assisting in the overall kitchen operations and maintenance as well as cleaning and sanitizing of designated kitchen areas, tools, equipment, pots, and dishes.

Your work will include:

• Ensure consistent quality standards in food preparation as per Chef'srequirements andsafety and sanitation in kitchen in accordance with Food Safe protocol.
• Prepare food items for Sandwich Making including select and cut breads, cut and wrap sandwiches, slice cold meats and cheese by hand or machine, and distribute meats, fillings, garnish and other ingredients on breads
• Visually inspect appearance of all cold food for proper color combination and overall presentation to maintain appeal
• Check and control proper storage of all food items in refrigerators and freezers to maintain product freshness
• Prepare and set up a full salad bar for lunch and supper
• Ensure food stocks are utilized effectively
