Cook 1- Pastry- The Westin Nova Scotian

Breads, Sweets, Pies they make people smile. And this is your specialty. Whether you prepare pastry, bread, ice cream or a centerpiece which wows guests your contribution is one which adds to the guest dining and / or banquet experience. You are the Pastry Cook 1. You bring baked goods to life. The hotel relies on you to produce a superior product and you take pride in making it happen, while working safely and staying within budget, knowing how to skillfully determine exactly how much you need to prepare each day. In the role of Pastry Cook 1, you will :

  • Be a Team Player whether it be a dessert, a bread, a cream or a jam, you are the person to make it happen under the Jr Sous Chef & Executive Chef's direction, assisting in other areas as needed to make the team succeed.
  • Be a Role Model your passion for your trade - including how to prepare all foods safely, to sanitary standards and within budget with limited loss or waste - is an art. Helping others to develop their talents is as well.
  • Be a Safety & Security Agent following your hotel's established safety and security policies & procedures. Anticipate problems and ask for management assistant as needed.

Job Duties :

  • Prepare and produce a wide range of high-quality pastries, including cakes, tarts, puff pastry, Danish, macarons, breads, and plated desserts.
  • Ensure all pastries meet the highest quality standards for flavor, texture, appearance, and consistency.
  • Execute complex dessert recipes, including layered cakes, plated desserts, and other specialty items, from start to finish.
  • Work with the pastry team to manage daily production, ensuring timely preparation and delivery of baked goods.
  • Prepare and assemble pastries, including mixing, proofing, rolling, cutting, baking, and finishing with decoration or garnishing.
  • Apply advanced decorating techniques, such as chocolate work, and intricate garnishes, for high-end presentations.
  • Ensure the final products are checked for quality, taste, and presentation before being sent for service.
  • Assist with the preparation and creation of seasonal or signature desserts, contributing to menu innovation and variety.
  • Maintain a clean, organized, and safe workspace, adhering to all food safety and sanitation guidelines.
  • Monitor ingredient inventory levels, assisting with stock checks, proper storage, and rotation of products to reduce waste.
  • Maintain proper use of pastry equipment, including mixers, ovens, and specialized tools, ensuring they are cleaned and maintained to the highest standards.
  • Assist in the development of new recipes and techniques, supporting the growth of the pastry program.
  • Follow all safety protocols when handling kitchen equipment, ingredients, and tools.
  • Collaborate with kitchen and front-of-house staff to ensure smooth service and timely delivery of dessert orders.
  • Participate in ongoing training and development, refining skills and advancing pastry techniques.
  • Perform additional duties as requested by the pastry chef or kitchen management.
