Job Purpose

To transform gluten-free ingredients into a cohesive, extensible, machinable dough that can be sheeted or laminated into a continuous sheet prior to cutting.

Duties and Responsibilities

The associate’s primary functions and responsibilities are as follows:

  1. Operate mixing equipment and weighing scales.
  2. Organize and prepare items carefully to be measured.
  3. Weigh multiple ingredients to ensure correct portioning and safety compliance.
  4. Accurately record the weight and composition of ingredients.
  5. Conduct scaling and load ingredients into mixers and bins.
  6. Transfer weighed ingredients to the dry mixer for processing.
  7. Follow dough formulation and add ingredients as specified.
  8. Perform dough checks as required.
  9. Clean machinery and the weighing room during changeovers according to GF SOPs.
  10. Communicate issues with team members and escalate to supervisors as needed.
  11. Follow FIFO procedures and communicate ingredient needs with supervisors and leads.
  12. Update metric boards regularly.
  13. Maintain a clean, sanitary, and orderly work area at all times.
  14. Adhere to all Gluten Free SOPs, including daily pre-op procedures and record keeping.
  15. Perform other assigned duties as required.
  16. Follow all health, safety, GMP, food safety, and food defense guidelines.
