Job description

Under the general direction of the Executive Chef, Director, Food & Beverage, or Kitchen Manager, this position is responsible for executing menu item production, maintaining food and labor costs, and ensuring all company standards and safety policies are followed. The role also involves contributing to a safe and welcoming work environment, providing input for performance evaluations, participating in recruitment, and supporting the company's learning environment.

Key Accountabilities

  • Schedule and supervise culinary team members; approve timesheets; provide performance feedback.
  • Direct team members in preparing, pre-cooking, cooking, and presenting menu items following standardized recipes.
  • Prepare, cook, and present menu items; assist on the floor at some locations as needed.
  • Maintain budgeted labor and food costs.
  • Submit food requirements for approval; may order food and supplies through regional programs.
  • Assist in developing new food items, standard procedures, and inventory levels.
  • Train team members in new culinary techniques through demonstrations and meetings.
  • Review inventory reports, analyze discrepancies, and conduct inventory counts at some locations.
  • Communicate effectively with operational departments.
  • Develop strong relationships with guests, ownership, and team members.
  • Ensure compliance with licensing laws, health and safety regulations.
  • Manage other initiatives as required.

Education and Qualifications

  • High School Diploma; culinary education is an asset.
  • Minimum 4 years of culinary management experience.
  • Minimum 3 years of leadership experience.
  • Red Seal certification through ITA or current enrollment.
  • Food Safety Certification.
  • Ability to obtain a Gaming License.
  • Excellent communication skills to exceed customer expectations.
  • Computer literacy in MS Office.
  • Bilingual (English/French) is an asset but not required.

Work Environment

  • Kitchen environment with standing and walking for long periods; exposure to heat, cold, steam, noise, odors, lifting, carrying, pushing, pulling, stretching, bending, fumes, smoke, chemicals, and risk of cuts and burns. Non-traditional work hours may apply.
