Reporting to the Central Kitchen Manager (or his / her delegate) or each store's Department Head, the Head Cook Trainee is responsible for managing, disciplining, guiding, and training Kitchen Deli Production staff at the assigned store or Central Kitchen. The role also involves overseeing the production of assigned products (BBQ, Hot Food, Dim Sum, Sushi, and other finished or semi-finished products), ensuring quality control, inventory management, wastage reduction, and supervising daily kitchen food production and working conditions in compliance with HACCP, corporate policies, and statutory requirements.

Key Responsibilities

  • Manage the Central Kitchen or store production processes and overall working environment.
  • Manage team performance, execute disciplinary actions, and provide training within the assigned area.
  • Monitor production efficiency and evaluate productivity during work.
  • Prepare, handle, clean, cut, marinate, and cook foods according to orders, including BBQ, Hot Food, Dim Sum, Sushi, and other products.
  • Ensure recipes, ingredient specifications, quantities, quality, and cooking times adhere to SOPs.
  • Conduct quality checks, manage inventory, and control wastage.
  • Maintain product quality, food safety, freshness, and FIFO practices.
  • Ensure proper storage and handling of food, including temperature record keeping.
  • Maintain cleanliness, hygiene, equipment, and workplace safety standards.
  • Develop and launch products for special events.
  • Perform other duties as assigned.
  • Demonstrate commitment, accountability, and reliability.
  • Collaborate effectively with colleagues.
  • Organize tasks and solve problems efficiently.
  • Maintain a positive, proactive work attitude.
  • Possess knowledge and experience in Kitchen Deli product preparation.
  • Hold Food Safe Certification and knowledge of workplace health & safety.
  • Experience supervising workflow, controlling costs, and wastage.
  • Manage and train employees.
  • Research and develop Kitchen Deli products.
  • Possess 5+ years of relevant experience, with at least 3 years supervisory experience preferred.
