Job description

We’re currently seeking a dedicated Sushi Cook to join the culinary team at Harriet’s Rooftop at 1 Hotel Toronto. In this role, you’ll take the lead at the sushi bar, preparing high-quality sushi and inspirational dishes using fresh, sustainably sourced ingredients. You will be responsible for maintaining consistency in technique, presentation, and quality, while keeping your station clean, organized, and guest-ready.

A sharp knife, a sharp eye, and a passion for precision will take you far in this role.

About you...
  • Passionate about sushi and Japanese cuisine, with at least 2 years of experience in a sushi-focused kitchen.
  • Skilled in techniques such as slicing sashimi, rolling maki, and preparing nigiri with consistency and care.
  • Knowledge of food safety standards and proper handling of raw fish.
  • Calm under pressure and able to thrive in a fast-paced, high-volume environment.
  • A collaborative team player with strong communication skills.
  • Flexible and available to work a variety of shifts, including evenings, weekends, and holidays.
  • Must have an updated Ontario Food Handlers Certificate.
  • Formal culinary training is an asset, but not required.
