Job Description

WHAT’S THE JOB?

Based in a world-class Horizon North camp facility, the shift is 20 days on and 10 days off, with 11-hour workdays. Transportation is provided from a designated pick-up point.

The First Cook is responsible for preparing and cooking all main meals according to requirements, ensuring meals are served on time to the highest standards of Horizon North.

This position is safety-sensitive and requires drug, alcohol, and fitness to work testing as a condition of employment.

Your responsibilities include:

  • Cooking a variety of appetizing meals, including meats, seafood, soups, poultry, vegetables, and other food items.
  • Using various cooking methods such as deep-frying, pan-frying, broiling, baking, boiling, grilling, sautéing, steaming, and others.
  • Ensuring all meals are prepared within the allocated food budget.
  • Maintaining consistency in food delivery, including cooking, handling, storing, and labeling products according to FOODSAFE standards.
  • Performing final food presentation tasks like plating and garnishing.
  • Operating all types of commercial and non-commercial kitchen equipment such as stoves, ovens, steamers, grills, and broilers.
  • Assisting in menu planning, inventory management, and grocery ordering.
  • Maintaining cleanliness and sanitation of the dining and kitchen areas.
  • Supporting all kitchen roles from dishwashing to prep cooking and meal execution to ensure timely service and cleanliness.
  • Performing other duties as assigned.

Qualifications

WHO ARE WE LOOKING FOR?

  • Minimum 5 years’ experience in hospitality or food service industry.
  • Interprovincial Red Seal Certificate or completion of a 2-year culinary arts program.
  • Desired experience as a Sous Chef in hotels, resorts, restaurants, or camps, with knowledge of international and domestic cuisines.
  • Strong practical and theoretical background in all kitchen areas: Hot, Cold, Pastry/Bakery, Butchery, and Banquets.
  • FoodSafe Level I certification is required; SafeCheck advanced or HACCP certification is an asset.
  • Knowledge of computer programs like Microsoft Excel, Word, Outlook, and Sysco.
  • Must score 100% or higher on the mandatory WHMIS test.
