Qualifications

What will you do in this job?

The Executive Sous Chef is the lead supervisor of all food preparation, coordinating the work of Sous Chefs, Cooks, and Dishwashers. Responsibilities include but are not limited to:

  • Scheduling
  • Order amalgamation from various kitchens/lines of business
  • Performance management and appraisals
  • Recipe and labor costing
  • Working with the Food and Beverage Coordinator to ensure accuracy of all ordering and documentation
  • Collaborating with FOH managers alongside the Executive Chef
  • Assuming kitchen and office duties in the absence of the Executive Chef
  • Analyzing sales reports to identify areas for improvement and implementing necessary adjustments
  • Supervising the training of Sous Chefs
  • Researching, recommending, and implementing new policies and procedures related to food preparation
  • Reporting maintenance and repair needs to the Executive Chef
  • Filtering BOH staff challenges/requests through to the Executive Chef
  • Supervising, expediting, and participating in food preparation, ensuring standards of quality, quantity, taste, and presentation
  • Checking food for taste, temperature, and visual appeal
  • Supervising food presentation and return
  • Storing food items properly to prevent contamination
  • Ensuring guest requests for special food items are met
  • Supervising the creation of attractive food displays
  • Other duties as assigned
What skills and experience do you need for this job?
  • Excitement about living and working in a remote (yet very social) environment
  • Minimum 3+ years of management experience in high-volume food service and restaurant operations
  • Ability to manage in a diverse environment with a focus on customer service
  • Proficiency in the latest sanitation and HACCP standards
  • Ability to control costs—food and labor
  • Computer literacy, including word processing
  • Proven leadership experience
  • Organizational skills and ability to implement culinary programs and brand development
  • Comfortable working on your feet for extended periods
  • Must meet grooming and appearance standards
  • Consent to a criminal record check as part of our commitment to honesty
  • Standard First-Aid certification or higher is an asset
