Executive Chef

What you will be doing :

  • Oversee the daily operations of the Kitchen, Stewarding and Cafeteria departments, including scheduling, performance management and employee training and development
  • Understand and execute on Accor Hotels Food & Beverage vision
  • Promote strong commitment to Fairmont Food &Beverage Standards
  • Develop and prepare menus suitable to each area of Food & Beverage, balancing creativity and guest requests while ensuring leading-edge presentation and food quality
  • Contribute to the profitability of Food & Beverage division through strategic and innovative promotional initiatives and regular assessment of the food product vs. value perceived
  • Collaborate on kitchen and F&Bcapital plans in a proactive manner
  • Actively participate in CSR initiatives, with a focus on reduction of food waste and carbon imprint
  • Promote teamwork within the Kitchen, Stewarding and Cafeteria departments, ensuring the effective utilization and productivity of all employees and providing hands-on support as required
  • Develop and maintain strong working relationships with all supporting departments
  • Control all food inventories while maintaining food cost targets within the budgeted guidelines
  • Ensures all municipal and provincial laws regarding hygiene and security are respected, as well as ensuring that employees adhere to all health and safety requirements
  • Overseeannual EHC Health Audit
  • Control the productivity of kitchen, stewarding and cafeteria employees within established guidelines while maintaining departmental food & beverage standards
  • Oversee the operations of the Staff Cafeteria to ensure the highest quality of product and service for our internal customers
  • Ensure that all kitchen equipment is in good working order and is properly maintained
  • Establish and maintain strong relationships with vendors and suppliers
  • Actively participates in the hotel's Leadership & Food & Beverage Meetings, holds regular departmental communication meetings and supports participation of employees in the various hotel committees
  • Participate in media and community opportunities to showcase food and beverage products and promote The Fairmont Vancouver Airport
  • Other duties as assigned

Qualifications

Your experience and skills include :

  • A minimum of 4+ years previous Executive Sous Chef experience
  • Experience in a 4 or 5 star hotel or restaurant or similar standard
  • Experience with all aspects of administration including budget and forecasting, food costing, schedules, menu design and labour cost
  • Highly motivated to inspire leading edge culinary experiences
  • Thrives in an environment of creative risk taking
  • Proactive with a demonstrated eye for detail and the ability to manage multiple functions / projects, while meeting deadlines
  • Proven leadership ability that demonstrates an environment of inter-departmental teamwork employee growth and development, and exceptional guest service
  • Must be focused on health and safety while involved in enhancing workplace wellness
