The Red Accordion Is Hiring A Sous Chef!

Love a great environment, eager to learn and grow yourself as a chef? The Red Accordion is looking to add to our kitchen team and we're searching for a sous chef, senior cook and CDP!

We opened our doors in 2019 and since then have established a solid reputation for great atmosphere, service, food and drinks. We are a small, independently run mom & pop shop and we take a ton of pride in what we do. Unfortunately our very talented chef will be leaving us for another opportunity, we appreciate everything he has done and his menu has given us a stellar reputation for quality, homemade food. That said, we have just brought on another talented head chef to help bring our food program to the next level!

Our new chef comes with a fresh inspiration of passion and experience in fine-dining. There is a lot to be excited for when applying!

This position will be for both days and/or nights, and must have open availability or at least 5 days available a week for Senior cook/Sous, and 2 or 3 days for part time. Formal culinary training and experience is an asset, but not always a requirement. Willing to train the right person with a great attitude! We would love people who are eager to push themselves to the next level, and passionate individuals with a keen desire for fermentation, culturing, fresh pasta, pastry and bread work.

Our menu will continue to focus on contemporary cuisine with ingredients sourced from local farms and fish mongers, prepared with a variety of different cooking techniques, and textures. Candidates with pasta experience, whole animal butchery, fish butchery, and love for fermentation are the perfect fit! Being as wild in the kitchen as you can be is highly encouraged.

A positive work-life balance is important to us and we do everything we can to nurture those goals. This includes sustainable hours, an amazing environment to work in. Shifts vary but will include mornings, evenings and weekends. Training can begin immediately.

Sous Chef pre-requisites:

2-3 years kitchen/restaurant experience
1-2 years of experience as a Sous Chef, or comparable
experience in fermentation, pasta work, pastry/ bread is a huge asset!

CDP Duties:

Ensure all inventory of food and equipment is accounted for and secured upon closing of kitchen.
Provide coaching, mentorship, and leadership to all cooks within the kitchen assisting with work, training, and development, including overview and updates on policies and procedures as needed.

Sous Chef Duties:

Create work schedules for all kitchen staff and assign work and duties accordingly.
Conduct pre-shift meetings with front and back of house communicating upcoming functions for whole day, products that are out/short, and daily features.
Always maintain composure and professionalism, ensuring kitchen personnel are supported and prepared for peak hours.
Follow proper reporting procedures for accidents and incidents
Execute daily meal periods, build relationships with FOH counterparts
