Job Description

Reporting to the Director of Food & Beverage, the Executive Chef plays a key role in the culinary experience at our iconic Château. As an inspiring and visionary leader, you are passionate about innovation, quality, and excellence in service. You embody our promise of exceptional hospitality at every moment.

Your responsibilities include, but are not limited to:

• Assemble, mentor, and develop a passionate culinary team driven by shared values of excellence, respect, and collaboration, within an environment that fosters creativity, boldness, and autonomy.

• Inspire a culture of excellence and collaboration throughout the team, nurturing a strong sense of belonging and shared pride across the establishment.

• Serve as an ambassador for Fairmont Le Château Frontenac, embodying the brand with passion and integrity, both internally and externally.

• Define and lead the culinary vision of the establishment while actively contributing to the identification and implementation of new business opportunities and strategic initiatives.

• Ensure clear, fluid, and constant communication with the team and internal partners to guarantee proactive planning and flawless execution, aligned with the highest standards of quality.

• Oversee all aspects of food and beverage operations: restaurants, banquets, special events, catering, Fairmont Gold, and La Casserole.

• Foster a stimulating and supportive work environment where talent thrives, evolves, and finds sustainable alignment with their aspirations and values.

• Supervise daily kitchen operations, ensuring consistency, rigor, and quality in every dish.

• Optimize operational performance: cost management, inventory control, workforce planning, and strategic resource management.

• Ensure strict adherence to health, safety, and food hygiene standards, as well as safe and efficient use of all equipment.

• Collaborate closely with other departments to ensure a seamless, consistent, and memorable guest experience.

Qualifications

• Degree in Culinary Arts or equivalent recognized training.

• Minimum of 10 years of professional culinary experience, including at least 5 years as an Executive Chef or in a senior culinary leadership role at a luxury hotel or renowned gastronomic establishment.

• Proven experience in leading and promoting successful restaurants, with a deep understanding of culinary trends, guest satisfaction, and business performance.

• In-depth expertise in planning and executing high-end banquets and events, with the ability to deliver exceptional culinary experiences at scale.

• Proven skills in personnel management, talent development, and creating a mobilizing, positive, and sustainable team culture.

• Ability to inspire creativity, introduce innovative concepts, and evolve the culinary offerings while maintaining the brand’s DNA.

• Excellent operational management skills: cost control, inventory management, strategic planning, and food safety and hygiene standards.

• Strong interpersonal communication skills, with natural, motivational, and collaborative leadership.

• Ability to work under pressure, manage multiple priorities, and maintain high-quality standards at all times.

• Fluency in French (oral and written) is required; knowledge of English is a strong asset.

• Passion for hospitality, attention to detail, and a constant desire to exceed excellence standards.

• Technical proficiency in key aspects of the role: menu engineering, sustainable culinary practices, allergen management, and strong knowledge of culinary operation-related digital tools (inventory management software, planning tools, technical sheets, etc.).
