Job Overview:

Under the supervision of the Line Leader or Production Supervisor, the Dough Controller's primary responsibility is to coordinate with Line Operators to manage dough supply and organization, ensuring FIFO practices. The role involves managing dough creation, monitoring temperatures, and following storage procedures.

Duties and Responsibilities:
  • Obtain and review documentation for batch production.
  • Fill in tags with required information for Dough Racks.
  • Ensure proper and safe operation of equipment, including cleaning and inspection.
  • Maintain a clean and hazard-free work area.
  • Adhere to Food Safety, GMPs, and Health & Safety standards.
  • Monitor product quality to meet specifications.
  • Coordinate with Line Operators to ensure smooth operations.
  • Follow FIFO for rack management.
  • Manage freezer space according to instructions.
  • Use thermometers or other instruments to monitor processes, if required.
  • Ensure production schedules are followed at all times.
Recipe for Success:
  • High school diploma or equivalent.
  • 1-3 years manufacturing experience; food manufacturing experience is a plus.
  • Computer skills, including machine controls and data entry.
  • Ability to work in a fast-paced, automated environment.
  • Strong teamwork skills and ability to work independently.
  • Good verbal and written communication skills.
  • Able to lift 25-50 lbs.
  • Problem-solving and decision-making abilities.
