What will you do in this job?
The Chef de Partie - Buffet will provide excellent guest experiences through the consistent preparation and focused execution of food items. The successful candidate will operate in a manner that provides a safe and enjoyable experience for guests, co-workers, and oneself.
- Act with integrity, honesty, and knowledge that promotes the culture, values, and mission of Pursuit.
- Ability to create and execute fine dining pastry dishes.
- Inspirationally lead and train kitchen personnel.
- Supervise and coordinate the preparation of all pastries at the Banff Gondola.
- Provide culinary instruction and demonstrations of culinary techniques.
- Order to forecasted volumes and specify budgets.
- Select and develop standardized recipes to ensure consistent quality.
- Maintain and audit presentation techniques and quality standards.
- Ensure all Health and Safety protocols are being adhered to as per AHS guidelines.
- Oversee special catering events.
- Meet or exceed forecasted/budgeted COGS/LTR and operational budgets (expenses).
- Work within inventory control systems, including daily updates to ensure accuracy.
- Comply with Pursuit branded policies and procedures.
- Follow Pursuit pillars of employment and service.
- Be comfortable with guest-facing and tableside interactions.
- Be flexible to work in various locations.
What skills and experience do you need for this job?
- Journeyman’s Red Seal preferred, or equivalent.
- 1-3 years of management experience in high-volume food service and restaurant operations.
- Experience in demonstration of pastries.
- Experience in menu writing, development, and costing.
- Strong background in high volume and production.
- Ability to manage in a diverse environment with a focus on customer service.
- Proficient in the latest sanitation and HACCP standards.
- Ability to control operating costs – labor and food.
- Computer literacy is essential.
- Effective administration through inventory programs.
- Highly organized with the ability to create consistency without compromising creativity.
- Comfortable working on your feet for extended periods.
- Adhere to the Pursuit grooming policy.
- Standard first-aid or higher is an asset.
