Job Description

The kitchen department is currently looking for a Chef de Partie – Pastry, to report to Executive Pastry Chef and Assistant Pastry Chef. This position involves delegating tasks and ensuring high quality preparation of all pastries in a timely manner. The successful candidate is a dedicated, passionate individual who is knowledgeable; customer service oriented and with a proven demonstrated abilities in a leadership role. This position requires flexibility and shift work, including early days, evenings and weekends

  • Assist in planning, coordinating, controlling all pastry and baking production, ensuring superior quality and consistency
  • Assist in the planning and developing of new pastries, cakes and deserts, and ensures consistent preparation and presentation
  • Play an active role in developing, coaching, mentoring and leading a high performance Pastry team.
  • Ensures an adequate supply of all products prepared on a timely basis.
  • Controls and monitors inventory supplies ie : pastries, dry goods
  • Ensures all kitchen equipment and pastry areas are in working order and meet Health & Safety standards
  • Assist in maintaining standard recipes to ensure costs of products are in line
  • Ensures that all sanitation procedures are in compliance with local and Provincial Health Department regulations and company standards
  • Communicated any concerns, conflicts and special promotions to staff
  • Co-developed with the Executive Pastry Chef the development of menus for daily and seasonal specials
  • Ability to train and supervise new internship students and employees with production
  • Has current knowledge with modern techniques, preparations, ingredients and any other topics related to the area of desserts in the culinary industry
  • Design, produce and decorate celebration cakes, confections, special amenities, breakfast pastries, sugar work, chocolate work and assorted pastries
  • Implements and adheres to company’s sustainability practices and policies

Job Skills and Requirements

  • Completed apprenticeship or equivalent
  • Provincial Red Seal Certificate or equivalent
  • Food Handlers Certificate
  • 2-3 Years in a high volume hotel / convention center kitchen.
  • Minimum 1 year in a Chef de Partie role
  • Ability to work early days, nights and weekends
  • Supports the Executive Pastry Chef in creating and motivating the team to deliver our vision of excellence
  • Highly effective communication skills – in all circumstances and situations – including having difficult, challenging and motivating conversations with team members and peers and is highly effective in dealing with our internal / external clients
  • Knowledge of purchasing system - Adaco preferred
  • Strong leadership skills. Ability to command the kitchen and supervise a unionized team.
  • Strong time management and organizational skills
  • Outstanding customer service skills with a can-do attitude
  • This is a unionized position. In accordance with the Collective Bargaining Agreement, employees in this role may become eligible for full-time status based on the number of hours worked annually.
