Description

Under the direction of the Executive Sous Chef and within the limits of established Kempinski procedures, assists in the direction of all aspects of the food production and Stewarding operations.

Key Responsibilities :

  • Assist with organizing special events and food promotions.
  • Assist the Executive Sous Chef in developing training plans and materials, and implement them for Food Production and other Food & Beverage staff.
  • Assume the duties of the Executive Sous Chef in their absence.
  • Help develop and maintain operations manuals, recipes, and dish costing.
  • Supervise food preparation and presentation in line with hotel standards.
  • Maintain hygiene standards in the kitchen and personal hygiene.
  • Ensure departmental standards and procedures are followed and updated.
  • Identify training needs and design programs accordingly.
  • Participate in performance appraisals and provide coaching and feedback.
  • Ensure safety policies are followed, including OH&S and HACCP standards.
  • Respond to safety hazards and log incidents appropriately.
  • Additional duties may be assigned as needed.
