  • Monitoring and maintaining consistent high food standards and quality.
  • Ensuring all HACCP is carried out correctly and signed off daily.
  • Making sure all dietary requirements are met.
  • Adhering to quality control measures and hygiene systems.
  • Monitoring the purchasing of all food and food-related products.
  • Achieving food budget cost controls.
  • Participating in the ongoing management and development of menus.
  • Ensuring accurate stock takes are produced monthly.

Head Chef!!! senior member of the kitchen team


Responsibilities


  • Monitoring and maintaining consistent high food standards and quality across all areas and during all stages of production and supply.

  • Ensuring all HACCP is carried out correctly and signed off daily.

  • Making sure all dietary requirements are met and all allergen controls are strictly kept to.

  • Adhering to quality control measures and hygiene systems are achieved at all times.

  • Monitoring the purchasing all food and food related products using nominated suppliers.

  • Achieving food budget cost controls, ensuring minimum wastage within the department.

  • Actively participating in the ongoing management and development of menus.

  • Ensuring accurate stock takes are produced monthly.

  • Adhering to procedures relating to stock rotation and use by dates and food is produced so as not to contribute to wastage.

  • Making sure all menus are costed accurately.

  • Checking that all services i.e., breakfast, morning snack, lunch and tea are to the standards discussed with the General Manager.

  • Delivering consistency during service times, ensuring that the food is presented according to agreed specification.
