Job summary

Journey Beyond’s Cruise Whitsundays operation in the Whitsundays region is seeking a Sous Chef to lead the land-based production kitchen, delivering high-volume, high-quality catering across vessels and private charters.

You will manage kitchen staff, maintain HACCP and food safety standards, control stock, and mentor the team to uphold exceptional guest experiences through food. Flexibility for peak periods and relief duties is required.

Qualifications

• Significant staff management experience in a fast-paced kitchen environment.
• Strong leadership and communication skills to drive high performance.
• Solid knowledge of HACCP and food safety standards and compliance.

Responsibilities

• Supervise and support kitchen staff during preparation and service, ensuring consistency in food quality, portion control, and presentation.
• Oversee daily kitchen operations, coordinating team efforts to deliver timely and high-quality catering products across vessels and private charters.
• Maintain strict standards of cleanliness and food safety, conducting regular inspections and audits in line with Australian Food Safety Standards and HACCP protocols.
• Assist with stock control processes, including ordering, inventory management, and minimising waste to enhance kitchen efficiency.
• Foster a positive team culture through clear communication and leadership, mentoring team members to promote continuous improvement.
