Freycinet Lodge is an eco-lodge in Freycinet National Park, near Wineglass Bay on the east coast of Tasmania. The Lodge comprises 70 rooms and a main lodge, built around a waterfront below The Hazards mountain range, located about 2.5 hours from Hobart or Launceston and near Coles Bay.

Job Description

With your experience, create an impact on our guests in this hands-on and detail-oriented role. Ensure our guests have a great dining experience and make holiday memories. Staff accommodation available.

What you’ll do

Freycinet Lodge is known for local produce and fresh seafood. You may work in dining venues from The Bay Restaurant (elevated dining) to Richardson’s Bistro (family-friendly casual dining). Treat guests as individuals, offering tailored options with a resilient, can-do attitude. On a daily basis you will:

  • Assist the Head Chef: Support the Head Chef in daily kitchen operations, including food preparation and cooking.
  • Supervise Kitchen Team: Oversee and train kitchen staff, ensuring adherence to food safety and sanitation standards.
  • Menu planning: Collaborate with the Head Chef to plan menus and daily specials, considering seasonal ingredients and customer preferences.
  • Inventory management: Monitor inventory levels, order supplies, and maintain accurate records to keep the kitchen running smoothly.
  • Quality control: Ensure dishes are prepared to the highest standards of quality and presentation.
  • Cost management: Help manage kitchen costs and minimise waste through efficient food preparation and inventory control.
  • Time and attendance: Manage team rosters in line with budgets and the Hospitality Award (HIGA).
What you’ll bring
  • Significant (minimum 4 years) hands-on experience in kitchen operations with understanding of restaurant and functions catering logistics
  • Formal qualifications in commercial cookery or equivalent experience in a professional kitchen
  • Experience in leading, coaching and mentoring a team while fostering a positive and productive work environment
  • A passion for your trade and for creating and presenting contemporary dishes using local produce
  • Excellent organisational abilities to manage multiple tasks and prioritise effectively in a fast-paced environment
  • Demonstrated excellent customer service, interpersonal and communication skills
  • Demonstrated computer literacy, particularly with common office applications
  • Food Safety Certificate of completion
  • Flexible attitude to work hours over a 7-day roster, including weekends and public holidays
