Responsibilities

• Carry out skilled meat processing tasks, including boning, slicing, and trimming kangaroo meat.
• Monitor and maintain quality control to meet safety standards.
• Operate and maintain band saws and slicers, following safety protocols.
• Collaborate with team to ensure efficient production.
• Handle and sort meat cuts and by-products as specified.
• Prepare carcasses by removing organs and hides for processing.
• Assist in stunning and slaughtering processes when required.
• Maintain cleanliness of equipment and work areas for a sanitary environment.
