Job summary

Vitelli's Upstairs in Surry Hills, Sydney, is seeking an experienced Restaurant Manager to lead day-to-day operations, drive service excellence, and develop a high-performing team.

You will manage wages, labour costs, and revenue targets while upholding RSA, WHS and food safety standards, with a hands-on leadership style and passion for Italian hospitality.

Qualifications

• Previous experience in a Restaurant Manager or senior management role within a fast-paced, high-volume hospitality environment.
• Proven ability to lead teams and create a positive, high-performance culture.
• Strong commercial acumen with experience managing labour, costs, and revenue targets.
• A hands-on leadership style with confidence leading from the floor.
• Exceptional communication and people skills.
• Strong organisational skills and confidence using rostering, POS, and reporting systems.

About the Role
