Job summary

YOMG Mordialloc is seeking a Full Time Prep Chef to lead the Prep Team, manage food preparation, production, and inventory. You’ll uphold YOMG’s quality and food-safety standards and ensure the kitchen is prepared for each service period.

The role emphasizes leadership, teamwork, and a passion for quality hospitality, with a daytime roster Tuesday to Saturday, 9:00 am–5:00 pm, including benefits such as free meals.

Qualifications

• Certificate III in Commercial Cookery or higher qualification.
• Experience in commercial kitchen operations, food preparation and production.
• Leadership or supervisory experience in a kitchen environment.
• Strong inventory-management, stock-control and organisational skills.
• Sound understanding of food safety, hygiene and workplace safety requirements.

Responsibilities

• Oversee daily food preparation and production needs.
• Lead and develop the Prep Team to meet recipes and production schedules.
• Allocate tasks and assist with labour planning for service readiness.
• Ensure compliance with food-safety, hygiene and workplace safety policies.
• Manage stock ordering, deliveries, FIFO rotation and inventory records.
• Monitor product quality, shelf life and portion control.
• Maintain prep areas, cool rooms and equipment to YOMG standards.
• Liaise with senior managers on production planning and improvements.
